Weird berries, stylish wine

Adelaide Hills is a quite cool region northeast of Adelaide in South Australia. It’s varied in terms of soils and expositions, and many of the best vineyards are scattered over large distances.

Ochota is the young couple Amber and Taras Ochota, who started their natural wine project in 2008.

They have a long list of wineries around the globe where they have worked and learned; the Hitching Post winery from the movie Sideways not least. By now they have half a hectare of vineyards of their own, high altitude on quartz and ferrous soil. They also tend an old grenache vineyard in lower McLaren Vale.

The wines are made according to natural methods, some whites with extended skin-contact. This one is more “normal” in that respect, a varietal gewürztraminer bottled with low sulfur values.

Light brilliant yellow with green tones. Aroma of white flowers, hay and herbs. Quite full but dry, good acidity with a trace of yellow tomatoes and also some stoney minerality. A stylish wine that strays from the often boring cliché of the grape.

Food: Fish (both white and red, grilled and cooked), shellfish (crab, prawns), squid, salads, cheese (both creamy and hard, like parmesan), pizzas (especially good with white sauce (two of them pictured, in the making…)

Gimme gimme gamay

After having heard about a “band” of winemakers calling themselves “punks” last week, let’s move on to the tale about former punk bassist Taras Ochota, who together with his partner Amber decided to form a winery in the Adelaide Hills of South Australia. They got the idea for a holistic project on a surf trip to Mexico, they say, after having seen some of the most amazing wine and surf regions there are.

Before this happened he worked as a flying winemaker, or a consultant, for a number of European producers, mainly in southern Italy, but also as an expert in the field for a Swedish importer. Amber also worked both in Italy and for a winery in Skåne, southern Sweden at a time.

This is an artisan project, with great attention to detail. The biodynamic approach they came across in the south of France. And they strongly believe that the most energetic and vital wines come from “organically farmed vineyards planted to earth that is alive, lo-fi technique and picking decisions made purely on natural acidity”. Texture is also an important focus, manipulating mouth-feel with limited or extended time on skins including batonnage. They experiment with low sulphur levels to find the perfect level to suit each cuvee.

The Price of Silence is a varietal gamay made with whole cluster fermentation, unfiltered.

Light red, some blue towards rim. Fresh aroma of cherries, plums and some pepper. Full and juicy in the mouth, but also with some tannin and a natural acidity.

Gentle wine from Gentle Folk

This wine I tasted at the Real Wine fair of London quite recently. Gentle Folk are Gareth and Rainbo Belton, who have seven hectars in Basket Ranges of Adelaide Hills. They farm their grapes are organically in the vineyard, and in the cellar all treatments are gentle, and with little or no additions.

Blossoms has traditionally been a merlot-based blend. But this year a change has been made: It has now become a varietal pinot noir from Norton Summit, not far away. This is a new vineyard for them, planted 25 years ago, and organically from the very first day. Whole bunches are gently pressed, before a short maceration.

Light cherry red. It’s full of red fruits (raspberry, strawberry) and flowers. In the mouth it is light, with a crisp acidity, but it has a surprisingly concentration of flavours. It’s honest and clean, bangs no drums, but lightly chilled it’s in perfect harmony on a mild summer’s day.
